Eggless Date and Walnut Cake
An extremely easy cake with just 6 ingredients and believe me it is so delicious that it will go way sooner than it took to make it. I made it especially for my mother in law who is a strict vegetarian and she too loved it. Great with that extra cup of tea/coffee during our chilly winters!

Atte ki Pinni (Wheat flour ladoos)
Atte ki PinnI (Wheat flour ladoos)
“Pinni a day wades winter away” is a popular saying in Punjab and many North Indian households. Come winters and all the grannies and Moms would start preparing pinnis. We would come from school and find a big pinni along with a glass of milk as our evening snack. Preparing pinnis requires patience as far as toasting the flour goes and rest is the easy part. The recipe essentially consists of three main ingredients wheat flour, ghee and sugar in equal amounts. The rest are added for taste and medicinal reasons e.g. Ajwain and coriander are digestive and fight against infections. So go ahead and treat your family with these delicious pinnis this winter.

With Dipawali approaching fast, cleaning and decorating the house has begun and from today onwards my sweet preparations will take a front runner till “the day”. I started with the most time consuming mithai moong dal burfi, rich and creamy, enjoyed and cherished throughout Rajasthan where it is believed to be made during the winter due to the fact that this dessert keeps the body warm. It takes a lot of patience as the dal (lentil) has to be sautéed slowly in low heat for a long time. If you are anti-calorie in your house – then forgive me for posting this and tempting you…ghee is revered in this dish and shines (and I mean it literally!) through this dish. If you know how velvet feels, then you will know how the texture of this halvah should be. Velvety smooth with a creamy texture where one spoonful simply vanishes in your mouth before you even realize what’s happening.

Rice Kheer
It rained and rained in Dallas for two days after months of scorching heat. And what else would celebrate the wonderful weather than “kheer and sweet puas”. This fragrant, creamy dessert garnished with dried fruit, nuts and cardamom -- and sometimes covered with a thin film of silver (which is beaten so fine that it is digestible) is well liked and very easy to prepare. Rice kheer otherwise known as rice pudding is especially popular across all of India and is eaten as a dessert at home as well prepared during many religious ceremonies. It is very versatile as it can be served warm or cold. This recipe uses "cooked rice". You can make this with your left over rice.

Besan Ke Laddu
Besan Ke Laddu
With the festival season just around the corner I will be posting some recipes that are usually a part of celebration in my home. This Janamashtami I prepared these besan laddus as an offering to the “Jhoolelal”.

Even though this is a simple recipe, with few steps the tough part is the stirring of the besan in the ghee continuously until it gets an even brown color and a nutty flavor. Also this recipe uses a liberal amount of ghee without which or any type of substitute the laddu will not taste the same. But since it is made of special occasions, the effort is all worth it.

Cranberry Pistachio Biscotti
Cranberry Pistachio Biscotti
Biscotti originates from the Latin word “biscoctus”meaning twice baked/cooked and can be stored for very long periods of time.Such nonperishable food was particularly useful during journeys and wars, and twice baked breads were a staple food of the Roman army.

Cranberry Pistachio Biscotti are crisp and crunchy and are lower in fat as they do not contain butter which makes them a nice alternative to all the other rich baked cookies. These have a long shelf life so they can be made well ahead of time and they are so good you may even want to give them as gifts (perfect for the tea and coffee lovers).

Enjoy dunking it in a cup of tea or coffee!

Simply Chocolaty cake
Simply Chocolaty cake
Sometimes you crave for something and you want it right away. I was craving for a really dark chocolate cake and within a matter of minutes I was baking one. It’s easy and quick to make, the kids might want to eat it with a glass of milk and adults with coffee or tea. My four year old daughter who’s at home these days enjoyed adding the ingredients and we both had a great time baking it!
